Kefir Horchata- THM FP

Classic Horchata is a delicious cinnamon, vanilla and milk combination! This kefir horchata adds a bit of tang from the kefir which you can control depending on how much almond milk you choose to add! This recipe can be changed to THM FP, E or S. Double fermented kefir no-fat is THM FP, If you like single fermented kefir the recipe is THM E. You can use Single fermented full fat kefir and make the recipe THM S! This recipe makes an awesome snack, but if you want it to be more filling you can add a scoop of collagen! Heres a link to the Collagen I use!

Recipe-

1 cup Kefir (see above for types!)

1/2-1c unsweetened almond milk (depending on your tastes!)

1 doonk stevia extract (1/32tsp) or a couple drops of liquid stevia

1 tsp cinnamon

1 tsp vanilla extract

Put it all in the blender, and blend for a minute or two

Note-Simply mixing or shaking this up won’t do, it leaves chunks of cinnamon floating and nobody wants that!

I love to use pure stevia extract in kefir recipes because granulated stevia blends won’t dissolve as nicely. Kefir Italian Cream Soda

Italian Cream soda is a treat I used to make on hot summer days- it’s sweet and creamy yet light somehow. But the truth is, it’s made with sugary flavored syrup, heavy cream and club soda. Here, we remove the bad and replace it with the incredible superfood kefir!

Kefir is an incredible health boosting drink! It’s full of prebiotics and probiotics making it incredible for gut health. But it’s flavor is a bit intense for some people! If you are a lover of all things kefir, or someone trying to get used to its flavor, his twist on Italian Cream soda is for you!

Recipe-

Flavored LaCroix (or similar no sugar carbonated water)

1/4 cup no-fat kefir

1 doonk stevia extract (1/32tsp) or a couple drops liquid stevia

1/2 tsp Extract of choice (I used the new trim healthy mama cherry natural burst!)

Mix the stevia with the kefir first. Otherwise it’s hard to mix! Granulated sweeteners such as super sweet, gentle sweet, truvia and pyure are more difficult to mix with kefir.

Pour the LaCroix over Ice, stir in the extract. Then top with kefir! Enjoy this creamy healthy goodness! Creamy Cauliflower Snickerdoodle Shake! THM – FP

Do you have trouble getting your veggies in your children or yourself?  This recipe disguises frozen cauliflower florets in to a creamy faux ice cream shake!  Don’t be disgusted by the idea of putting frozen cauliflower florets into an ice cream style shake. Cauliflower is an incredibly versatile vegetable that can be used as a sub for unhealthy foods and to boost your daily vegetable intake! Cauliflower is low carb low calorie and zero fat, it has little to no flavor on its own, and because of this, its an incredible super food! This base recipe is THM- FP because of the low carb, low calorie and low fat ingredients. See below for some modifiers to make this shake THM- Deep S and keto friendly.

For the base recipe:

2 Cups Frozen Cauliflower Florets (cauliflower rice works too, florets are usually cheaper!)

2 Cups Unsweetened Almond Milk

1 tsp Vanilla extract

1 tsp Cinnamon

2 tsp THM Super Sweet or Pyure stevia blend

1 scoop Unflavored or Vanilla whey (see note)

1 tsp gluccomannan (optional)

Place everything in the blender except the whey and glucomannan (if using) and blend until well combined. Lastly, sprinkle on the whey and glucomannan and blend for another 30 seconds or so. Enjoy!

For THM Deep S and Keto option- add 1 Tbsp MCT oil

Notes

If using vanilla whey, omit the vanilla extract and sweeten to taste, most vanilla protein powders are already sweetened.

Glucomannan is an incredible supplement that you can add to your diet to promote weight-loss by stabilizing your blood sugar and making you feel fuller longer. It can be used as a thickener in keto recipes and does thicken this shake a bit to make it more like an icecream shake. The Start of a Life Long Journey

Laura’s Story:

Back in 2014, I was having lunch with some of my homeschool mom friends, when one of the Moms plunked a big fat white book down on the table. ” You girls need to read this book”, she said. I laughed to myself, ” Ha! I have three young children, when am I ever going to have time to read that honkin’ thing? Besides, I’m pregnant again (surprise!!) with number 4, I can’t start a diet now!” Fast forward a year, my new baby was about three months old, and I was the heaviest I had ever been at 220 pounds.. My birthday was coming up, and I had asked my husband for the new Trim Healthy Mama books, they were smaller and seemed less intimidating ). I had lost weight successfully with the Atkins diet, and even worked as a health coach for a big fitness company, but nothing could ever stick long enough because well, every time I had made progress, I would get pregnant again. Financially it was difficult – I was always making two menu plans, the processed, expensive junk for my kids because they wouldn’t eat the “health food”, and the special shakes you had to buy were so expensive! Healthy eating in our family just never lasted too long. I read the first book in about 3 days. It was such a fun, easy read, and it seemed like I was able to do this eating plan for my whole family ( which we do!). The authors talked about the whole concept of food freedom – which I love, I get to have fats, and carbs and I don’t feel deprived! In the last three years,… there was one more baby, but I have lost a total of 50 ( gained 20 back with my last pregnancy and since has lost another 30 + pounds )so far since starting this plan. My last pregnancy was the healthiest I have ever had.

Leslie’s Turn:

The short version? I’ve always tried to be healthy. Even in high school I can remember thinking about the choices I made when it came to food. I’ve tried low carb, low calorie, gluten free, dairy free, veganism, and a bunch of fads in-between. I struggled feeling healthy at any weight. Just because the scale had a certain number on it, didn’t make me ever really feel healthy. Until, my sister started talking about Trim Healthy Mama. I started casually learning about THM in 2015 and was fully in plan by 2017. My body has been through a lot! A journey with infertility and healing, multiple pregnancies, a couple miscarriages, short interval pregnancies and twin pregnancy! As a mama of 3, I’m healthier than I’ve ever been. I’m finding joy in exercise and the food I put on my plate (as well as my families plate!). I’m on a journey for health and I’d love for you to join us!

Culturing Kefir at Home

Kefir is a cultured milk product similar to yogurt. Much like making yogurt at home, making kefir at home is much more cost effective than buying in the store. However, making kefir is easier than yogurt! Kefir is made right in a mason jar or container, no need for crock pots or fancy yogurt makers.  Kefir is Amazing! It is said that Kefir was with Noah on the ark, and rumored to be the “mana” that fell from heaven. The people in the Caucasus mountains drink kefir on a daily basis and  are said to have a longer life span !!  True or not, Kefir is amazing,  because the healthy pro-biotics stay in your gut longer than yogurt making it incredible for digestive issues.  Ever heard the saying your health starts in your gut?  This good bacteria also helps you ward off sickness during  cold and flu season. Plus it helps fight the bad bacteria that increase sugar cravings Ka Pow!!

Kefir is a fermented food, and it has a bit more of a tangy-taste than yogurt. “Double fermentation” comes from a fermentation period of twice as long and results in ultra low carb and   low natural sugar content, and more tangy flavor! Don’t worry, it doesn’t taste like sour milk! We drink it daily, either as a beverage or as an ingredient in recipes. It’s actually quite versatile! So here’s what you need to get started.

-Kefir grains- you can buy these online! Or get some from a friend who cultures kefir at home. Some health food stores sell them as well

-Milk- raw and organic is best. But store bought will do! We will talk more about skim, versus whole, versus 1% 2% ect. in a bit!

-Plastic or wooden spoon, plastic or glass jar, plastic strainer. You should not use metal spoons, containers or strainers as it kills the culture!

Recipe-

2 Tbsp kefir grains

1 pint milk

Mix the kefir grains and milk in a pint mason jar and loosely cover with a coffee filter secured with a rubber band. This allows the kefir grains to breath (they’re alive and need oxygen too!) while ensuring flys don’t get into your jar! You can use cheese cloth if you have it instead of a coffee filter. (Make sure to keep the coffee filter or chesse cloth dry, as a wet filter is the ideal breeding ground for flies… yuck)

Let this sit on your counter (away from the sun) or in a dark cabinet for 24 hours.

Now that it’s sat for 24 hours to culture, grab a strainer, and pour the pint jar into a clean jar, using the strainer in between to catch the kefir grains. It will be thick, and you will need to stir the mixture through the strainer.

At this point, you can place your kefir into the fridge or start enjoying it right away!

Or, you can put a lid on your mason jar (not just a coffee filter) and leave it on your counter for another 12-24 hours for a longer fermentation period.

Now, take the kefir grains in your strainer and put them back into your first jar, the one that you might want to call “dirty”. It’s already full of your culture! You can put the grains back into the jar, refill with milk and top with coffee filter to start again! **Peanut butter jars fit perfectly on regular mouth mason jars!!

I chose to make this recipe in a pint jar, but my sister has a big family, so she doubles the grains and makes it in a quart jar!

Now- for some tips and troubleshooting kefir advice…..

1. Milk types. Full fat , Raw milk can be used if you prefer lowest carbs, don’t mind the fat content, and don’t plan on double fermenting. This kefir is rich and considered THM S. Lower fat milks can be used as well, and can fit into your THM E or FP settings because of the lower fat content. The lowest fat, lowest carb kefir is double fermented skim milk kefir. This kefir is definitely THM FP.  Serene and Pearl recommend that when using store bought milk,  skim milk is the best.

2. Uh oh, you left the kefir too long and it turned into curds and whey.

This is also called kefir cheese. Don’t sweat it! You can scoop out 2 Tbsp of the kefir cheese and use it in milk as you would kefir grains and start over. But don’t throw out your kefir cheese!  Try out our Kefir cheesecake recipe here Strawberry Kefir Cheesecake THM S ! You can also use this kefir cheese in your pasta, sandwiches, it’s somewhat spreadable and dippable and so good for you!!  Try mixing the kefire cheese with a packet of ranch seasoning,  for a yummy ranch veggie dip or salad dressing! 3. Kefir separation

About this amount of separation is normal! Just shake it up! Depending on your strainer, your kefir might be a bit chunky. You can put it in the blender and smooth it out if consistency is a problem for you.

4. Yuck! I don’t like the taste! Don’t worry, it will grow on you! But here are some ways to spruce it up and make it delicious.

  •  You can mix it half and half with almond/ or coconut milk to diminish the sour taste.
  • Add some fruit ( like frozen strawberries) and stevia( or other sweeteners like truvia or swerve) and blend it up!
  • A refreshing  tart cherry Baobab smoothie- YUMMY!  Add two frozen cherries, a scoop of baobab powder, stevia.
  • Kefir Italian soda!  – blend kefir, almond milk, fruit and stevia  till smooth,  pour into a cup and top with ice and carbonated water for a refreshing fizzy drink.
  •  Use it in a smoothie recipe in place of yogurt or milk.  Stay tuned for our Kefir Horchata recipe!

5. Too many kefir grains!

Kefir grains grow and multiply! Give the extra away to your friends. Store them in your freezer or just eat them. They are good for you, but have an intense taste!

5. I don’t need this much kefir! If you don’t need to continually make kefir, you can take a break from your constantly culturing by putting the grains in 1/2 c milk and placing in your fridge (with a regular lid on) for up to two weeks. When you are ready to start up again, they will be ready! If you need more than two weeks off, refresh the milk. After taking a break from kefir, you might need a longer fermentation period,  as cold grains take a while longer to wake up.

6. Cold house or hot house… the temperature of your house matters! Warmer temps in the house, shorten your ferment to 12-18 hours. Colder house? Lengthen our ferment to up to 36 hours.

7. Kefir smells like sour milk. Kefir should have a pleasant, yeasty,  tangy, scent. It shouldn’t smell like sour milk. If it does, something went wrong and you should start over. Unfortunately, even the grains can’t safely be salvaged.

Craving Crushing Cookie Dough Bites! THM S

 

Need a quick something sweet? My sister Laura created this recipe to quickly crush her sweet tooth cravings and the two of us modified the recipe over time to come up with this final product! In a pinch, you can make the single serve recipe and eat it right out of the bowl. If you make it ahead of time, you can form it into little bites! I also like to make a large batch and keep them in the freezer!

Single Serve–

1 Tbsp butter- melted

2 Tbsp  Trim Healthy Mama baking blend * See note*

OR- 1 Tbsp coconut flour, 1 Tbsp almond flour

2 pinches of mineral salt

2 tsp truvia or THM gentle sweet( if opting out of molasses try new swerve brown “sugar”)

dash of vanilla

Doonk of molasses (Doonk = 1/32 tsp) (optional)

1 Tbsp sugar free chocolate chips (like Lily’s or Trim Healthy Chocolate Chips)

 

Cream together the butter, sweetener molasses, salt and vanilla. Then mix in the baking blend (or two flour substitutes) and the chocolate chips. Form into 2 cookie dough bites!

Multiple Serve—

4 Tbsp butter- melted

8 Tbsp  Trim Healthy Mama baking blend * See note*

OR- 4 Tbsp coconut flour, 4 Tbsp almond flour

1/4 tsp mineral salt

2.5 Tbsp truvia or THM gentle sweet

¼ tsp of vanilla

¼ tsp of molasses

4 Tbsp sugar free chocolate chips (like Lily’s or Trim Healthy Chocolate Chips)

Cream together the butter, sweetener molasses, salt and vanilla. Then mix in the baking blend (or two flour substitutes) and the chocolate chips. Form into cookie dough bites! Store these in the freezer or the fridge for a quick snack to crush your cravings! Serving size is 2 bites!

Make Your Own Taco Seasoning! THM-FP

Why my taco seasoning in a packet when you already have all the ingredients in your cupboard? I have played with many taco seasoning recipes, and have eventually come up with my own that my family loves. I make this recipe in a mason jar, and keep it in my cupboard for seasoning taco meat, chili, and other Mexican dishes!

Taco Seasoning! THM FP

½ cup chili powder

2 teaspoons cumin

1 ½ teaspoons onion powder

2 teaspoons oregano

¼ teaspoon cayenne pepper

¼ teaspoon coriander

1 teaspoon crushed red pepper

1 ½ teaspoons garlic powder

2 ½ teaspoons of mineral salt

1 teaspoon black pepper

1 teaspoon paprika

1 teaspoon cocoa powder

1 tablespoon glucomannan

Mix these ingredients well in a Mason jar and storing your cupboard

Use 2 tablespoons of the seasoning blend, with ¼ cup water for every 1 pound of meat!

If your family prefers mild taco seasoning, you can use half of the black pepper, cayenne pepper and crushed red pepper! Adjust these three to suit your tastes!!

The cocoa powder in this recipe gives taco seasoning a rich flavor, I promise it does not taste like chocolate taco meat! The glucomannan in this recipe it Is optional, however it does add to the texture, and it’s a powerful blood sugar stabilizing superfood!

Overcoming Sugar Headaches Naturally

My husband and I have been working really hard on self-discipline this year. A verse we often quote to each other is  Hebrews 12:11  No discipline seems pleasant at the time, but painful.  Later on, it produces a harvest of righteous and peace for those who have been trained by it. This is a great verse to remind yourself when you are eyeballing that huge piece of decadent chocolate cake.  There was one point in time when I went through our cupboards and labeled everything “migraine food” if it wasn’t on plan.  Until I started tossing all the junk into the trash… that’s way more therapeutic!

Yesterday,  I caved to one of those super soft, sugar cookies from the grocery store  – you know -the ones with slathered in the bright colored, half inch of butter cream on top?   But YOWEEE! I am paying for it today!  My sister, Leslie gets headaches from sugar withdrawal, I get headaches from blood sugar spikes, often as quickly as the first bite of something full of sugar. Here’s it what I have been doing after my cheats to help get the headaches go away. ( I prefer to try to ease headaches naturally, because too much pain killers can cause more headaches , these are called rebound headaches – YIKES).

When I know I’m going to be off plan, I try to take a good girl moonshine with me, to help slow the digestion of sugar.

The next meal, (usually breakfast for me), start with a  meal with deep s meal *(see note) and if possible continue for the whole day, to allow your body to empty out all the excess sugar.

Load up on natural anti-inflammatory goodness! I love taking turmeric (If I’m not pregnant) , but I also love to drizzle lots of high quality olive oil on a salad and  eats lots of yummy sweet peppers. Vitamin C is a wonderful fighter for headaches too, for some reason the Baobab powder with water is super comforting and soothing to an achy head.

Get some good electrolytes.  I love adding pink sea salt to my water and sipping on it all day, if my headache is bad, I will do a super salty shot, to get it into my system.    I also take magnesium and potassium, if you want to get these nutrients for food sources, you could load up on dark chocolate, avocados, cashews and seeds, such as sunflower seeds. And get lots of dark leafy greens too!

Later on, in the day, enjoy some nice creamy kefir for a snack, add some stevia, vanilla and cinnamon to it, Kefir is a great probiotic which helps control candida and sugar cravings.  Cinnamon too helps reduces the sugar cravings, and its yummy.. WOOT WOOT!

Sometimes a migraine can be debilitating, but if you can, a nice brisk walk is excellent! Get that blood flowing!  I have also found a lot of relief from putting peppermint oil in my difuser while I sleep.

I usually find that when the migraine breaks, I have an intense craving for carbs.  That’s when its great to have a nice juicy chicken breast with a sweet potato on the side, or a nice big bowl of oatmeal.  Yummy!

Yah, discipline can be painful, especially when everyone around you is having some sort of amazing, sugar filled  treat, But, you will have peace,  reap rewards   and not have a headache in the end… although,  if you mess up, we still love you! Get some rest! Tomorrow is a new day!

Cinnamon Spiced Oolong Tea- THM FP

I love a chai tea, and this Cinnamon Spiced Oolong Tea is a chai spice inspired spin on Oolong. Oolong Tea is fabulous for weight loss, simply drinking the tea burns calories. On its own, Oolong is a mild soothing tea, similar to black tea, but milder. It’s caffeinated, but it doesn’t leave you jittery. This tea is suitable for all day sipping, or anytime during the day! Its THM FP. I love to enjoy it after a meal when I need something sweet.

When I make this tea, I use two tea bags since I’m making a large mug of the stuff! I love Bigelow Teas, they are individually sealed for freshness and have excellent flavor. Sometimes Oolong is hard to find in local stores, so I buy mine here. Trim Healthy Mama has an excellent Oolong tea as well, it can be found here.

Steep 2 bags of Oolong tea and 1 cinnamon stick for 5 minutes. Then squeeze out the deliciousness of the Oolong and discard the bag. Leave the cinnamon stick though, it smells great and won’t hurt anything. I also use the cinnamon stick as a stir stick so I don’t have to dirty a spoon!

After the tea bags are removed, I add a splash of unsweetened almond milk for creaminess and a packet of truvia.

Enjoy this cup of warm, spiced deliciousness!

Gettin’ Back “On the Wagon”

So you’ve just come home from a birthday party, and you just couldn’t avoid the cake. Or you’ve rebelled for a few days and eaten all kinds of junk. Or even if you’ve spent months eating whatever you’ve felt like. Getting back on the diet wagon can be difficult, and it can come with some uncomfortable symptoms. Lets tackle each problem one at a time.
  1. Self Loathing: Why have I done this to myself? I was doing so good! I’m the worst! Okay, you’ve spent some time with those thoughts. Brush them away, because you’ve made a decision now to do better! Focus on that instead. Focus your energy on making plans or finding what works for you to be successful. And plan to do better for the next meal.
  2. What to do with the junk food you have in your house, the temptations. This is a problem you are going to have to tackle based on your personality and situation. For some of us, tossing all the junk, or giving it to a food shelter removes the temptation and will make you successful. For others, having the food in the house isn’t such a big deal. Removing the food from your house might deprive others in your home from foods they enjoy. For me, I have to have healthy alternatives that I can go for, and leave the junk in the house. I have the junk for my family, so they don’t feel deprived (not that I want them eating only junk!). But what works for me is to separate foods on the shelves in my pantry, one shelf for junk, the next for healthy. This way, I know to avoid the shelf for junk.
  3. Headaches- a nasty symptom of sugar withdrawal or blood sugar spikes!  As your body deals with the surge of sugar and then no-sugar, many people experience headaches. Aside from your medicine cabinet, there are a few things you can do. Getting back on track with a few high fat/ ultra low carb meals (think no dairy, no nuts, just healthy fats like eggs, meat, coconut oil) can help.   4. Bloating, Constipation or Diarrhea- whether you are experiencing going to often, or not going enough. These tummy troubles can really ruin your day. Make sure you are getting enough water.  Drinking a good amount of GGMS is a good way to increase your water intake.
  5. Feeling Exhausted- Getting sugar out of your system and getting back into fat burning mode takes energy! This leaves you feeling groggy and yucky for a few days. Make sure you are getting enough nutrients. Don’t spend these few days trying to get back on track and massively reducing calories at this time. We’re not saying to go out and eat non-stop! Having a mid-afternoon cup of coffee, or black tea is a nice pick-me-up during this time.  Take a nice long walk outside, but don’t overdo the exercise.
  6. Own your cheats –  you may want to step on the scale to see how much you have “gained”. Don’t be discouraged, you probably will see a higher number on the scale. You could let the number gets you down, and use it as an excuse to keep eating poorly. DON’T!  Chances are its mostly excess water weight. Reality is, that a one time cheat isn’t going to make you instantly gain 5 pounds of fat.  Give yourself a few days of eating on track to weigh yourself, if you want to – you  might be surprised!
